Lime Rice

Ingredients
2 cups boiled and cooled rice
2 green chillies 1 stalk curry leaves 1 onions finely chopped 1 tbsp. grated fresh coconut 1/2 tbsp.
coriander finely chopped 1/4 tsp. each cumin seed, mustard seeds, urad dal 1/4 tsp.
turmeric powder 2-3 pinches asafoetida salt to taste juice of half lemon 1 tbsp. oil

Recipe Method
Use a heavy or nonstick pan. Heat oil, add seeds, and dal. Allow to splutter. Add green chillies, curry leaves, onions, asafoetida Cook till onions are light pink. Add rice, turmeric, salt, lemon, coriander, coconut. Stir gently till well mixed. Cover and simmer till steaming hot. Serve hot.

Fried Rice

Ingredients:-

a) 3 cups Water

b)1 1/2 cups Rice
c) 2 tbsp Peanut Oil
d) 1 small Onion, chopped
f) 1 small Capsicum, chopped
g) 1 tsp Garlic, minced
h) 1/4 tsp Red Chili Powder
i) 3 Spring Onions, thinly sliced
j) 3 tbsp Soy Sauce
k) 1 can Baby Peas, drained

l) 2 tsp Sesame Oil
m) 1/4 cup Peanuts, roasted.

How to make Vegetable Fried Rice:
• First boil water in a saucepan and add rice to it. Cover the pan and allow it to simmer on a low flame for about 20 minutes.
• In the meantime, heat peanut oil in a large wok on medium flame. Add onions, bell pepper, garlic and red chili powder and cook it for about 3 to 4 minutes.
• Now, increase the flame to medium high and add cooked rice spring onions and soy sauce. Fry the mixture for about a minute.
• Now, add peas to it and cook for about a minute more. Thereafter, remove the wok from the flame and add sesame oil. Mix well and garnish with peanuts.
• The delicious vegetable fried rice is ready to be served!! keep enjoy.
