Eggplant Casserole
1 lg. eggplant , cut into cubes
1 can cream of mushroom soup
1 egg
1 c. poultry seasoned stuffing
1 bell pepper , chopped
1 onion , chopped
Cook eggplant in boiling , salted water until tender . Drain and mash . Add mushroom soup , egg , stuffing , pepper and onion . Put into greased casserole . Sprinkle a little poultry seasoning on top . Bake at 350 degrees until brown on top.
