Dry Green Bean Curry
INGREDIENTS:
12 oz/350g green beans
1 potato, peeled and diced
1 tbsp desiccated coconut
4-5 curry leaves
3 green (or red) chilies
2-3 garlic cloves (optional)
3 tsp urid dal, washed, soaked in cold water for 10 minutes and drained
¼ tsp turmeric
¼ tsp coriander powder
4 tbsp vegetable oil
salt to taste

DIRECTIONS:
Heat the oil in a pan and fry whole chilies, finely chopped garlic, the urid dal, curry leaves, turmeric and fry for few minutes.
Add the potato and continue frying for 5-6 minutes.
Add the green beans, coriander powder salt and desiccated coconut.
Cover and cook for 4-5 minutes.
Stir and cook for about 5

Hi there,
I just googled a recipe for green beans and yours came up. I wanted to thank you for the delicious recipe, I enjoyed it a lot. I skipped the potato and instead of urad dal, I used red lentils (I didnt soak them, for they are easy to fry). THe whole dish was so great. I am soooo making this one again. Maybe will add cumin next time…. What do you think?
