3/4  cup vegetable oil

1 1/2 pounds boned , skinned turbot , salmon , cut into large bite – size pieces

2 large onions , peeled and grated

8 garlic cloves , crushed

1 1/2 – inch piece of fresh ginger root , peeled and grated

1 teaspoon  cumin seeds

1/4 teaspoon turmeric

1 teaspoon ground red pepper

1 cup plain yogurt

1/2 teaspoon salt

1 teaspoon sugar

Heat 1/2 cup of the oil in a large skillet over medium heat . when hot , fry the pieces of fish in batches until they are lightly browned on all sides . Drain and reserve.

Add the remaining 1/4 cup of oil to the pan and cook the onions over medium – low heat until begin to turn golden . Add the garlic , ginger , cumin , turmeric , and red pepper and cook for 2 minutes.

Add the yogurt , salt , suger. Bring to a boil lower the heat and simmer gently for 10 minutes.

Add the resered fish , cover and cook for 2 -3 minutes to heat it through serve immediately with rice.
